Abstract: To build the society’s trust and acceptance of water reuse and anticipating solutions for mitigating future scenarios of more severe water scarcity, the Lisbon living lab innovation actions included a pilot demonstration of water reclamation for artisanal beer production to provide scientific evidence on the safety of direct potable reuse in industry. Deliverable (D) 2.8 proposes a protocol for water reclamation aiming at water reuse in craft beer production. It includes (i) a discussion of the three key components/dimensions, regulatory, technical, and public outreach, of direct potable reuse for craft beer production, and (ii) an analysis of the multi-barrier approach needed for safe direct potable reuse for craft beer production, the Critical Control Points, and the monitoring, based on the results and lessons learned from the pilot demonstration conducted in Beirolas Water Resource Recovery Facility, in the B-Watersmart Lisbon Living Lab.
